Vitamins can be separated into two groups - either fat-soluble
or water-soluble which is usually an indication of the types of
food where these vitamins are found - either watery or fatty
foods. There are thirteen vitamins for humans and nine of them
are water-soluble - eight B vitamins and vitamin C. Four
vitamins are fat-soluble and they are vitamin A, vitamin D,
vitamin E and vitamin K. |
Many of the vitamins in fruit are water-soluble as fruit is
generally high in B and C vitamins. This means that these types
of vitamins can dissolve in water so they are lost very quickly
and easily through cooking processes and time lapsed between the
Fruit being picked and being eaten. Some vegetables are eaten raw
and remain unaffected by any cooking methods. |
