Preparing Vegetables for Roasting
When preparing vegetables for roasting recipes, follow these quick and simple instructions below:

Wash the vegetables thoroughly under cold running water

Cut the vegetable accordingly, for example you may have to peel the skin away before slicing the vegetable into segments (for detailed information about a specific vegetable, please refer to the A-Z vegetable guide which can be accessed through the main index and will explain, in detail, how it should be prepared ready for roasting)

Most vegetables should to be cut into generously sized segments before roasting as small segments will cook quickly and probably burn during the process

Try to cut the variety of vegetables into equal sized segments to ensure that they roast at more or less, the same rate

How to roast vegetables in the oven

Follow the preparation guidelines before starting to the roasting vegetable recipe

Preheat the oven to 180 degrees

Pour 2 tablespoons of oil (preferably olive oil or an equally healthy option) into a polythene bag (It is important not to use too much oil for roasting vegetable recipes as it can make the vegetables very distasteful and soggy, they will also take longer to cook). This method using only the amount of oil that is normally required for perfect roasted veggies!

Place the roasting vegetables in the bag and shake until they are coated with oil

Empty the segments of vegetables into the roasting tray

All sorts of vegetables can be roasted including onions, garlic, potatoes, parsnips, yam, swede, sweet potato, carrots, mushrooms, aubergine, courgette (zucchini) - these are all ideal oven vegetables but you can use whatever roasting vegetable you like, they are all healthy and packed with vitamins which are good for you, so try as many varieties as you can!

Place the baking tray in the preheated oven

Allow to roast for approximately 25 to 30 minutes.

Keep a close check on the vegetables and shake the baking tray once or twice during the roasting process to prevent them from burning or sticking to the tray

Test the vegetable are tender and ready to be eaten by pricking them with a fork
